I haven’t mentioned this yet but my crossfit gym started a Paleo Challenge on Monday May 4th. It is a 45 day challenge. We did a bod pod before the challenge and then we are going to do a bod pod after the challenge to measure our successes.
This was quite a fun experience, I knew my results weren’t going to be pretty, but I am very excited for my end results.
Now on to the eats…. The first week was probably the hardest! I would say that cutting out carbs and dairy were the hardest for me.
My go to breakfast for week 1 was Sweet Potato Breakfast Hash.
This breakfast is so easy to make and so delicious! You simply cube 1/2 a sweet potato and put that in a pan over medium heat with 1 tbsp butter or olive oil. Once the sweet potato are easily pierced with a fork add in two slices of cut up bacon, 1/4 a pepper cut up and 1/4 red onion cut up. Once the bacon is looking crispy add in 2 eggs. Gently scramble the eggs in the frying pan. Once the eggs are cooked your breakfast is ready! So delicious!
Another quick meal I threw together for lunch one day was Salmon Cakes.
This recipe was found in my Practical Paleo book. Or if you don’t have the book you can find the recipe here! I made a couple of my own adjustments but for the most part I stuck to the recipe! These were so easy to make for a quick and easy lunch.
One of my week night dinners I made came from my Practical Paleo book also. I made Balsamic Braised Short Ribs with carrots and a side of Cauliflower mash and this meal was AMAZING!
Diane doesn’t have this recipe on her website so you have to buy the book to get it but it was SOO easy!!! Maybe I’ll try to make a recipe of my own and then I will post one for you! But you can buy the book for around $20 on amazon.
The last thing I made was when I was really craving something, anything that resembled carbs. I decided to try a recipe for a 3 Minute Mug English Muffin.
I found this recipe on Arman’s blog The Big Mans World. This recipe was a bit eggy, but I am finding that most paleo recipes are! It was very good and I will be making it again. Next time I’m going to make a breakfast sandwich and add a fried egg and a couple slices of bacon!
For my first week on the Paleo challenge it was fairly successful. I did have a few cheats, it was Nurse’s Week so that made it extra difficult. I also worked a few night shifts which added to the challenge. I am fairly happy with my first week successes!
