Ready for the recipe of the week I’ve been holding onto this one for a while so I’m excited to share it with y’all.
In my family we LOVE yogurt! My parent’s love it, I love it even Scott loves it! Instead of buying the pre flavored yogurt that is most likely packed with crap I like to flavor my own! I’ve been doing a lot of experimenting and I really love the flavor combo of blueberries and lemon.
For this chia seed pudding instead of using plain greek yogurt I used my homemade plain kefir. For those of you that don’t know what kefir is it is like yogurt but it is more liquid so you can drink it.
Scott’s cousin got me into making my own homemade Kefir! She saw on Facebook that I had been drinking it for breakfast and snacks and when I went down to Scott’s uncles farm she gave me some grains so I could make my own! It is so easy and lots of fun to make. And WAY CHEAPER!!!!
You can buy your milk kefir grains HERE, they ship them to you and give you instructions on how to rehydrate the grains. Once they are rehydrated you simply let your grains sit in a certain amount of milk for 1 day and then strain the grains from the milk and start over. Super easy process and so tasty
Since you accumulate the kefir very fast I love mixing it with Chia Seeds and fruit so it becomes thicker and sweeter.
- 3 cups Kefir Milk
- ½ cup Honey
- 1½ cups Frozen Blueberries
- ½ cup Chia Seeds
- 1 Lemon, Zested
- Simply mix all of the ingredients in a bowl, cover and let sit overnight until it because thick.
- Depending on how much juice your berries give off you may need to add more chia seeds in the morning.
- You don't have to use homemade kefir, you can buy plain or flavored kefir at the grocery store.
