Becky is a firm supporter of treating ourselves even in the smallest ways. It can be with shopping, working out, sweet treats…. anything that is for you!
The majority of my treating happened over the weekend. The main way that I treated myself was by relaxing. I have had a really busy past 5 weeks with school and work… last weekend and Monday I did some major relaxing!!!
Now it is back to reality and studying…. I have a test on Thursday.
Now I have a very delicious recipe to share with you guys!
BBQ Apple Cranberry Pork Chops/Tenderloin
Pork Chops or Tenderloin
1 cup BBQ Sauce
1/2 cup frozen cranberries
1 apple peeled and chopped
Cook your pork chops or tenderloin according to the directions on the package. Tonight I cooked 2 pork chops in a 400 degree oven for 25 minutes. Internal temp should be 160 degrees. While the pork is cooking start cooking the sauce. Cook the apples and cranberries over medium heat. Once the apples have softened and the cranberries burst open add the BBQ sauce. Simmer on low for about 5-10 minutes, until the pork is ready.
Once the pork is done top it with the BBQ cranberry apple sauce.
The potatoes are halves. Spread butter on them and top with grated parmesan cheese. Place on a baking sheet cheese side down and bake in a 400 degree oven for 40 minutes. These potatoes are SOOOOOO amazing!!!!!!!!!
We also enjoyed a wonderful salad with our pork and potatoes.
Such a great dinner!!!! Scott’s mom and step dad loved this pork!!
